Perennial Herb Which Is Great for Soups
Nutritional, Culinary & Medicinal Uses
Culinary: One can season meats with a winter savory rub on pork, beef, and chicken. One can also add it to Herbes de Provence. It can additionally be added to a quart of white wine vinegar to add to salads, sauces, soups, and roasted vegetables, and further it can be used as a salt substitute [1].
Medicinal Uses: Savory is often used as an anti-septic and anti-fungal because it contains carvacrol and thymol, which are antibacterial and antifungal respectively. Further it contains zinc, vitamin C, and iron. It contains fiber, is a digestive aid, and it fights inflammation [2].
How to Cultivate and Harvest
Planting: One can begin the planting process from seeds or from stem cuttings. Start the seeds indoors four to six weeks before the end of frost. Sow lightly and do not cover with soil, and fourteen days later, they should germinate. Keep the soil just moist. (see site for how to grow by propagation) To plant outside, plant the holes 8 to 10 inches apart. Mix in some bone meal into the holes. Water lightly. (Gardener’s Path) [3].
Harvesting: They can be harvested any time, though ideally during the summer. Harvest just after the dew dries, and only cut from mature stalks [3].
Preservation
One can dry at 95 F for 1 to 2 hours in a dehydrator. Then put them in an airtight container in a cool, dark cupboard, and they can be good for about 3-4 years [3].
History
Savory originally arrived in Britain with the Romans, and its impression was so great that the name quickly came to denote flavorful and delectable foods [4].
